It's been quite a while since I've blogged and I do apologize. A combination of things has led to my absence. The main one has been computer problems. In that ongoing saga, I believe we've finally gotten to the source of the glitch. In the end it was not a software issue but a server/network issue.
Life has been great here at Shady Creek Hollow. We got our landscaping installed last week. I've got lots of Knock Out roses now! About 18 bushes worth! I'm so happy with our yard, I could sit on my front porch all day long and enjoy the view. My new hobby is watering the grass and bushes LOL.
I've been reading and relaxing and generally enjoying my Summer. I've been researching recipes and food presentations. We have lots of opportunities for hospitality in the Summertime and I like to try new foods and ways to serve them. One of my favorite ideas this Summer is to make banana pudding in individual 1/2 pint jars to serve for dessert. They are so cute for a casual meal and it eliminates the need to dip up and serve the messy pudding. These little jewels can sit on your buffet ready for the taking.
Just make the banana pudding as usual but assemble it in half pint jars. Also I find banana pudding delicious when flavored with bourbon instead of vanilla extract.
